Hello Amal.

All the documentation about gvSIG is in the web site of the project [1]. 
You say that you need documentation about 2.0 but the build 1211 is not 
a build of the 2.0 version. If you have a look to this page [2] you can 
see that you are working with a build of the 1.9 version.
