thanks for your interest! I can tell you more...
I've saved on my pc the GML (v. 3.1.1) that comes naturally from
mapserver and the one derived from a request with outputFormat=GML2. I
discovered that, while the first one is not entirely loaded and
furthermore alters the view extent, the second one is loaded perfectly
without problems.
Probably my WFS service, which is based on the latest version of UMN
Mapserver, produces a GML, which is not supported by GML driver yet.
Maybe a trick to avoid this kind of problem could be to force GML
version to that one supported when gvSIG is connecting to WFS server.
