Dear Cain,
in the TOC, just right-click on the layer in question and there (context
menu) on "properties"). The desired information can be found in the
"General" tab (see attached screenshot).

Of course, ogr would also be your friend: ogrinfo -al name_of_the_shape.shp

It would be cool, if gvSIG would "warn" the user, if a 3D shapefile is
loaded into the application. If gvSIG would provide a process to convert the
data, it would be even "more cool". Well, I love those ogr-tools. They're
really powerful.
