Hola Javi,

Como te comenté depende del tipo de capa que tengas cargada se 
habilitarán unas u otras opciones en los menús. En tu caso, creo que lo 
que tienes son capas raster, imágenes, con lo que es normal que no 
puedas ni editarlas ni ver su tabla asociada ni exportar a los formatos 
shp, dxf, postgis o gml.

En cambio, sí podrás Exportar la imagen, desde el menú Vista (en formato 
png, jpeg o bmp)

En cuanto a Salvar a raster se ha detectado algún problema con ciertas 
opciones, que estamos resolviendo. El tamaño que comentas es bastante 
grande, pero no debería haber problema (sólo que si las imágenes están 
en remoto tardará más)...
